Low Carb (Grain Free / Gluten Free) Pumpkin Bread

Yield: Serves 10

Ingredients:

1 cup almond butter
½ cup coconut flour
1/4 teaspoon baking powder
1/2  teaspoon baking soda
4 large eggs
½ cup maple syrup
½ cup pumpkin puree
1 tablespoon cinnamon
2 teaspoons nutmeg
1 teaspoon ground ginger
1 teaspoon allspice
1/8 teaspoon salt

Procedure:

1. Preheat oven to 375 degrees.
2. Line a loaf pan with parchment paper.
3. In a large bowl, combine all ingredients. Using a hand mixer, mix until well combined.
4. Pour into loaf pan.
5. Bake for approximately 45 minutes. Insert a toothpick into the center and done if it comes out clean.
6. Can be stored in airtight container in a cool place for 2-3 days and then stored in the refrigerator.
